You will need: **available at Scoop and Scales
2 cans black beans, drained, rinsed, and patted dry**
1 Tbsp oil **
1/2 of a pepper
1/2 of a large onion
3 garlic cloves, minced
1 and 1/2 tsp ground cumin
1 tsp chili powder
1/2 tsp paprika
1/2 cup bread crumbs
1/2 cup feta cheese
2 large eggs
pinch salt + pepper
What to do:
- preheat oven to 375°F (163°C). Spread beans evenly onto a lined baking sheet and bake for 15 minutes until slightly dried out
- Meanwhile, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes. Gently blot some of the moisture out
- Place in a large bowl or in a food processor with the remaining ingredients
- Stir or pulse everything together, then add the black beans. Mash with a fork or pulse the mixture, leaving some larger chunks of beans
- Form into patties– about 1/3 cup of mixture in each
- To bake: Place patties on baking sheet and bake at 375°F (163°C) for 10 minutes on each side, 20 minutes total
Store leftovers in the refrigerator for up to 5 days.
